Baked Blueberry Oatmeal & Matcha Yogurt

Blueberry, cinnamon & Matcha are a dream team for me. The earthy Matcha with the sweetness of the cool coconut yogurt on top of the warm cinnamon oatmeal, hits on a different level.

Ingredients

1  cup blueberries  

1  tsp baking soda

1  tsp cinnamon

1  cups rolled oats (Bob Mills)

1  egg

1 ½   cups almond milk (Malk)

2 tbsp almond butter (Justin’s) 

½ cup Cashew & Coconut yogurt (Foragers dairy free)

2 tsp Matcha powder 


To Do

1. Preheat oven to 350 degrees. Whisk baking soda, cinnamon, oats (you can also use quick cooking oats), egg, almond butter & almond milk.


2. Fold in blueberries with a spatula and pour half of the mixture into 2 small ramekins. Bake for 18-20 min


3. Whisk yogurt & matcha powder until soft peaks form.


4. Top baked oatmeal with yogurt and enjoy!
